Smart Substitutes: Pancakes

As a child, Sunday mornings was the day for cooked breakfasts. Usually it would be bacon and eggs but on special occasions my sister and I would often make pancakes for the family. These are a much healthier, cleaned up version of course!

Pancakes 
(makes enough for 2 pancakes... they are very filling!)

1/2 cup Quick Oats
1/2 cup Almond Meal
1 egg
1 tsp Maca Powder
1 tsp Psyllium
1 tsp Cinnamon
Almond Milk for desired consistency (I use about 1/2 cup)

Mix all ingredients in a bowl (I just use a fork). Then it's pancakes as usual! Put a bit of oil/butter in a fry pan and pour in the desired amount of mixture. You may need to spread the mixture out with a spoon as it can be quite thick and doesn't pour as easily as traditional pancake batter. Look for bubbles or the edges starting to brown and curl up before flipping the pancake over to cook the other side. Ensure the pan isn't too hot... no body likes burnt pancakes!
Top with whatever you desire... I have tried organic maple syrup, coconut sugar with lemon juice, or just fruit!
